Truly Special

My Holly Hobby teacup was a gift from my sweet mum :) it is just too adorable for words.

Tuesday Dinners


My friend Jolie and I have started "Tuesday Dinners" it's time shared cooking the same recipe together. We are miles apart but sharing Tuesday Dinners makes the miles seem to disappear.


Parmesan and Potato-Crusted Flounder with Tomato-Cilantro Sauce:


3 tomatoes chopped
1/2 small onion chopped
3 tablespoons fresh cilantro chopped
1 1/2 tablespoon red-wine vinegar
1/4 teaspoon salt
1 large egg
2/3 cup potato flakes
2 tablespoons grated parmesan cheese
1/2 teaspoon black pepper
4 (1/4 pound) flounder fillets
1 tablespoon olive oil

To make sauce, combine the tomatoes, onion, cilantro, vinegar and salt in a serving bowl

Lightly beat the egg in large bowl. Combine potato flakes, parmesan & pepper on sheet of wax paper. Dip each fillet into the egg to coat on both sides, then into potato mixture, pressing lightly to adheres.
Heat oil in large skillet over med-high heat. Add flounder and cook until browned or just opaque in center 2-3 minutes on each side. Serve with sauce.

Salsa Vinaigrette

1 cup salsa, 1/4 cup chopped sweet onion, 1/4 cup cilantro, 1 Tbs lime juice, 1 Tbs balsamic vinegar, 1 tsp Dijon mustard, bit of salt. Puree all in food processor or blender. Transfer to bowl and use as dressing over salad :) so very good!


This teacup was part of a set.. there is a lovely teapot and another cup in the set. I love it and the dear friend it was from.
