Tuesday Dinner Across the Miles / Grilled Chicken & Pear Salad

Grilled Chicken and Pear Salad
serves 4 
Ingredients:
4 (5oz) skinless boneless chicken breast halves
1 tsp dried basil
1/2 + 1/8 tsp salt
1/4 tsp pepper
2 Tbl apple cider
2 Tbl chopped white onion
1 Tbl olive oil
1 Tbl all-fruit strawberry spread
8 ounces mixed baby salad green
1 Pear thinly sliced

Step One:
Sprinkle the chicken with the basil and 1/2 tsp of the salt and the pepper.
Step Two:
Spay a ridged grill with nonstick spray and set over med-high heat. Add the chicken and cook unit browned and cooked through, about 3 minutes on each side.
Step Three:
Meanwhile whisk together the vinegar, onion, oil and strawberry spread, add the remaining 1/8 tsp salt in a serving bowl. Add the salad greens and toss to coat evening.
Step Four:
Cut the chicken breasts on a diagonal into think slices. Add the chicken and pear slices to the salad and toss to mix well.

Grandparents

My husband's Grandparents are celebrating their  68th Wedding Anniversary tomorrow we are looking forward to spending some time with them tomorrow.  This photo I took not to long ago, and the plate was a gift they gave us, it belonged to my husband's Grandfather's mother. The plate is from Norway and says "Give us this day our daily bread"

Bedford Inn Victorian Bed and Breakfast





I am so excited!! Look at the Beautiful Bed and Breakfast I will be staying in with my Mom,Tony and Josh In October!!! My sweet mom surprised me with this Lovely gift!!! We will be staying for two nights!!! I am so very excited :) I LOVE YOU MOM, thank you for such a lovely Blessing.  My Nephew Josh will be graduating from the Coast Guard Academy in Cape May NJ, he is the main reason for our trip, we are so proud of him. 

Tuna Melt recipe

Clean Eating Tuna Melt

6oz can of tuna in water
3 Tbsp. celery diced
3 Tbsp. red onion diced
2 Tbsp. carrots diced
2 Tbsp. tomato diced
2 Tbsp. apple diced
1/3 cup nonfat Greek Yogurt
1 1/2 tsp. white wine vinegar
1/2 tsp. dried oregano
3/4 tsp. parsley flakes
1/8 tsp. pepper
2 slices whole wheat bread
2 slices tomato
2 one oz slices reduced fat Swiss Cheese

Divide tuna salad equally amount both slices of bread. Top each with 1 slice tomato and 1 slice cheese. Broil topped bread halves for 5 - 10 minutes or until lightly browned. Makes 2 Servings

My husbands Grandmother gave us this rolling-pin... she received this from her grandmother.. It is over 150 years old and truly a treasure to own. I would love to know all the many recipes it helped prepare.
The little napkin ring is from Norway and was given to my husband from his grandparents when he was born, his name is engraved on it as well as a little bear.
The teacup is part of the set we also received from my husbands gracious grandparents, they are darling and a blessing to us.

The Inheritance


Each Wednesday evening I am participating in a Women's Bible Study at our church, we are doing a Beth Moore DVD Study called "The Inheritance" and let me just say WOW!!! It is truly a blessing. Tonight we were talking about how we view the Lord in our heart of hearts.... it is a thought to ponder ....
It brings me Joy to know God is our Shield and our Great Reward.
Nothing is impossible for God.. and will not the Judge of all the Earth do right? We can truly rest in Him always ...let go and let our Father take the wheel of our life.

Great Read
