Tea Bunny

I really love this tea bunny, she sits so sweetly on my desk in the office and is a precious reminder of the Joy the Lord gives us.

Tuesday Night Dinner Across the Miles: WW Spinach Lasagna Rolls



 Jolie picked our dinner menu this evening and boy was it a hit! Thank you Jolie :)
 Tuesday night dinner across the miles is a time where Jolie and I share the same dinner recipe and then post them on our blogs. This is such a fun venture and we have learned a lot.  Click here to see Jolie's Beautiful dish :)
Spinach Lasagna Rolls
  • 9 lasagna noodles, cooked
  • 10 oz frozen chopped spinach, thawed and completely drained
  • 15 oz fat free ricotta cheese (I like Polly-o)
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • salt and fresh pepper
  • 32 oz tomato sauce
  • 9 tbsp (about 3 oz) part skim mozzarella cheese, shredded
Preheat oven to 350°. Combine spinach, ricotta, Parmesan, egg, salt and pepper in a medium bowl. Ladle about 1 cup sauce on the bottom of a 9 x 12 baking dish.

Place a piece of wax paper on the counter and lay out lasagna noodles. Make sure noodles are dry. Take 1/3 cup of ricotta mixture and spread evenly over noodle. Rollcarefully and place seam side down onto the baking dish. Repeat with remaining noodles.

Ladle sauce over the noodles in the baking dish and top each one with 1 tbsp mozzarella cheese. Put foil over baking dish and bake for 40 minutes, or until cheese melts. Makes 9 rolls.

Bee's and Pineapple



I bought the most yummy pineapple today, we ate it up with dinner tonight.
This sweet Bumble bee Teapot with teacup and saucer was a gift from my sister, it you click on the photo to enlarge it you will see the cute bumble bee  sitting in the bottom of the cup, just too adorable.

Tuesday Night Dinner Across the Miles: Tuna Melt Panini Style


Jolie and I each purchase a Panini maker so we could expand our Tuesday Night Dinner menu :)
Tonight we each made a different recipe.
My Recipe for a Tuna Melt Panini:
1/2 cup plain fat-free yogurt
4 medium scallions, thinly sliced
2-3 teaspoons prepared horseradish   
1/4 teaspoon ground ginger
1/4 teaspoon coconut extract
2 6oz can tuna, drained
8 slices whole wheat bread
4 slices of Havarti Cheese

In a medium bowl, combine the yogurt, scallions, horseradish, ginger and coconut extract; stir in the tuna and blend well. Spread the tuna mixture evenly onto 4 slices of bread, then top each with a slice of Havarti Cheese then top with the remaining bread.
Place on Panini maker and grill for 4 minutes :)   This recipe makes 4 sandwiches, I cut the recipe in half to make two sandwiches tonight.
This was so yummy, I loved the hint of coconut flavor. I also added a bit of chopped celery to the tuna mixture just because I love celery.

Coffee and Tea

My husband found this at Disney and it reminded him of something his Grandparents use to have so we purchased it for our kitchen and it is just perfect on our counter in the corner.

My Disney Travel cup!! I love this cup and had the hardest time finding a replacement for the one I had that was ruined in the dishwasher. My sweet friend Amy found this for me at the Disney Coffee shop when she was there for one of their famous Carrot Cake Cookies. THANK YOU AMY! I love this cup, it is porcelain and thermal inside. Perfect for Coffee and for Tea

Tuesday Night Dinners, tonights dish is Shepherd's Pie


1 Tbsp butter
2 Tbsp all purpose flour
1 Cup Chicken Stock
1 teaspoon salt
1/4 cup water
2 cups cooked chicken chopped
2 carrots sliced and blanched
1 cup chopped spinach leaves
1 onion chopped
1/2 cup frozen corn kernels
1/2 cup evaporated fat-free milk
1 tsp dried thyme
1/2 tsp ground marjoram
1 medium potatoes, cooked, peeled and mashed
1 Tbsp ground parmesan cheeps
1/4 tsp paprika
In a med saucepan over med heat, melt the butter. Sprinkle with 1 Tbsp of flour; cook, stirring constantly 2 minutes. Whisk in broth, salt and water; bring to a boil. Reduce heat and simmer stirring constantly, until thickened 3-4 minutes.
Preheat oven to 400'F; spray a 2 quart casserole with nonstick cooking spray.
In a large bowl, combine the chicken and the remaining Tbsp flour. Stir in the carrots, spinach, onion, milk, thyme, marjoram and the sauce. Transfer to the casserole. Top with the potatoes, spreading to cover the filling completely; sprinkle with the cheese and paprika. Bank until bubbling and potatoes are golden  about 30 - 35 minutes.   Rest out of over for 10 - 15 minutes before serving.

 Tonight was Jolie's night to pick the meal for our Tuesday Night Dinner Across the Miles. This was really a good recipe, I made mine a little different from Jolies this week. I had the recipe in my WW cookbook and assumed it was the same one Jolie had sent me...but it was not the same. Tea with Berry Topped Cake and Strawberry Sauce


This was our Super Bowl Dessert it was truly sweet and delicious!
two 6 oz container raspberries
two 6 oz container blackberries
2 Tlbs fresh mint thinly sliced
1/2 cup + 2 Tlbs sugar
1 Tlbs + 2 tsp lime juice
2 cups Strawberries hulled
1 9oz angel food cake cut into 6 wedges 

Gently toss together the raspberries, blackberries, mint 2 Tlbs of the sugar and 2 tsp lime juice in a large bowl and set aside.
Combine the strawberries and the remaining 1/2 cup sugar and 1 tablespoon lime juice in a food processor and puree.
Place a wedge of  cake on each of 6 plates, spoon about 3 tablespoons of the strawberry sauce around each wedge and top with about 1/2 of the berry mixture.

Tuesday Night Dinner Sweet & Tangy Scallops

Sweet and Tangy Scallops

Makes 4 Servings 

2 Teaspoons olive oil
1 Onion chopped
2 Garlic cloves, minced
1/2 teaspoon ground ginger
Pinch crushed red pepper
1 Red Bell pepper, chopped 
1 Cup reduced-sodium vegetable broth
1/4 cup dark raisins
1 teaspoon lime juice 
1/2 teaspoon salt
1 pound sea scallops (about 24)
1/4 cup chopped fresh cilantro

Step one: 
Heat the oil in a large nonstick skillet over medium-high heat. Add the onion, garlic, ginger and crushed red pepper. Cook, stirring until the onion is softened. about three minutes. Add the bell pepper and cook, stirring occasionally, until crisp-tender, about 2 minutes. Add the broth, raisins, lime juice, salt; bring to boil. Reduce the heat and simmer about 5 minutes.

Step two: 

















Add the scallops to the skillet and simmer, covered, until just opaque in the center, about 5 minutes, Stir in Cilantro. 
This was a yummy dinner and I found the recipe in my WW book and it calculated to 3 points.
