1 Onion chopped
2 Garlic cloves, minced

Pinch crushed red pepper
1 Red Bell pepper, chopped
1 Cup reduced-sodium vegetable broth
1/4 cup dark raisins

Step one:
Heat the oil in a large nonstick skillet over medium-high heat. Add the onion, garlic, ginger and crushed red pepper. Cook, stirring until the onion is softened. about three minutes. Add the bell pepper and cook, stirring occasionally, until crisp-tender, about 2 minutes. Add the broth, raisins, lime juice, salt; bring to boil. Reduce the heat and simmer about 5 minutes.

Step two:

Add the scallops to the skillet and simmer, covered, until just opaque in the center, about 5 minutes, Stir in Cilantro.
This was a yummy dinner and I found the recipe in my WW book and it calculated to 3 points. I served it over rice and had some baby carrots on the side.  The rice was 2 points and the carrots were 0 so the total meal was 5 points.   Awesome!!   Please check out Jolie's Beautiful dish Here.  I look forward to Cooking Tuesday night dinners across the miles.  Another Wonderful meal!! :)    Tag you're it Jolie, your turn to pick next week
